Because the aromas and flavours found in wine are eulogies to diversity, vintages contribute to new nuances of pleasure and because a gourmet meal offers a unique opportunity to explore them... for all these reasons Les 110 de Taillevent came to be.

For the first time ever, a luxury brasserie created by an acclaimed French gastronomic institution is offering 110 wines by the glass (served in 2 measures of 12.5cl or 7cl), each glass associated with 30 seasonally-inspired "à la carte” dishes specially conceived to deliver unparalleled precision in the pairing of food and wine.
To complement each dish, Pierre Bérot, "Mr Wine" at Le Taillevent in Paris, offers a choice of four wines in four price brackets, all expressing the aspects of a perfect match between wine and food. A real diversity of propositions made possible thanks to an innovative wine conservation system.
From the fresh, envigorating citrus flavours of a New Zealand sauvignon, to the generous fruit of an Italian Barolo or the depths of the tobacco and cedar notes of fine Bordeaux, a lifetime is not long enough to explore all the flavours of the world's unique terroirs.

About the Chefs    
     
     

Alain Solivérès

Born in Béziers in the South of France in 1963, Alain Solivérès shares with everyone his passion for his cooking, his kitchen aids - to who he offers a gastronomic dictionary - and his 60 producers, thoroughly chosen and followed for their quality. From a classic obedience, he has proven throughout his impressive career, from the Louis VX in Monaco to Le Taillevent in Paris, a unique ability to transform an overlooked product into an absolute essential of great cuisine.

Trained by the best - Claude Balloco, Jacques Maximin, Michel Rochedy, he is now in charged of a new legend, carrying on his shoulders the tradition of Le Taillevent and promoting its certain idea of food and wine pairing. For Taillevent embodies a style which likes to ignore fashion, the permanence of the gastronomic culture which evolves very subtly - a framework in which his talent can flourish.

Emile Cotte

Trained in several of the most prestigious three Michelin stars in Paris - Le Pré Catelan, Taillevent and Guy Savoy, Emile Cotte is an experienced and renowned chef. Fan of rugby and trips, he is one who likes challenges and new concepts, whether it was at the restaurant Meating in Paris or now at Les 110 de Taillevent London. 

In collaboration with Alain Solivères, with whom he had already worked at Le Taillevent and performed culinary demonstrations as in Taipei in 2007, Emile Cotte regularly draws up a new menu. Along the seasons, carefully calibrated to provide the best experience of food and wine pairing that is the essence of the Taillevent House, the menu marries perfectly with the selection of wines made by Head Sommelier Julien Escarrie.

The Crus Classés de Graves    
     

Located on the southern outskirts of the city of Bordeaux, in the Pessac-Léognan appellation, the Graves region takes its name from its stony terroir

The sixteen estates, classified in 1953,have the unusual distinction of producing both red and white wines.
